From the Gardens of Lucan
This particular batch was gathered by my bees in Lucan during the early spring of 2025. It captures the very first nectar of the season from local suburban gardens and wildflowers, resulting in a light, delicate floral flavor.
The Art of Soft Set Honey
Many people ask how we get this honey so smooth. It isn’t a factory process; it’s about patience. After being extracted and coarsely sieved to remove large wax particles, the honey goes into my creaming machine.
I mix the honey for 15 minutes, then let it rest for an hour. I repeat this cycle for 3 to 5 days. This gentle movement encourages the natural honey sugars to form tiny, microscopic crystals rather than large, crunchy ones. Once it begins to turn a beautiful pearly white, I jar it immediately to finish setting.
The result is a thick, spreadable honey that is perfect for bread, crackers, or simply enjoying by the spoonful.
