From Our Hives to Your Home, 100% Raw, Local & Truly Irish

At Olly’s Farm, "raw honey" isn't just a label—it's our entire philosophy. We believe in preserving honey exactly as the bees intended: rich, unprocessed, and bursting with the unique flavours of Dublin & Wicklow.

Unlike mass-produced supermarket honey, our process is beautifully simple and respects the product.

We never heat our honey. Pasteurisation (heating) destroys the delicate enzymes, pollen, and floral aromas that make raw honey so special.

Our honey is simply extracted from the frames and cold filtered. This means it only passes through a coarse filter to remove large particles like wax cappings or propolis

We don’t force our honey through fine filters to make it look perfectly clear. We believe this strips the honey of its natural goodness and character

Because our honey is raw and unprocessed, it will always crystallize naturally over time. This is the hallmark of true, high-quality honey.

From Our Bees, Not Just Our Brand

Every jar we sell is 100% Irish honey, produced exclusively by Olly’s Farm bees. We are beekeepers, not honey packers, and we take immense pride in our craft resulting in our honey being the most awarded honey in Ireland.

Our bees forage from our own apiaries all around Dublin and North Wicklow, capturing a unique taste of the local landscape in every jar.

If it’s in an Olly’s Farm branded jar, it was made by Olly’s Farm bees. We never buy or use any other beekeeper’s honey to sell as our own.

We never blend honeys from different harvests. Every jar is a snapshot of a single season and is fully traceable right back to the apiary it came from. That’s why every years honey is a slight variation.

Because our honey is raw and unprocessed, it will always crystallize naturally over time. This is the hallmark of true, high-quality honey.

Our honey is a seasonal product, guided entirely by nature. Because we only sell what our own bees produce, some varieties, such as our pressed Heather honey, are in very limited supply and can sell out quickly.

Commitment to Quality and Standards

We are dedicated to producing safe, high-quality honey. We are proud to be one of the first Irish members of the Bee Farmers Association (BFA) in the UK and are also an active member of the Federation of Irish Beekeeper Associations (FIBKA). Our produce is fully covered by public and product liability insurance, and we are officially registered with the Department of Agriculture and the Food Safety Authority of Ireland. This rigorous adherence to standards, alongside the fact we've won some great awards for our honey since 2017, assures you of our commitment to excellence.

Spring Blossom

Our first harvest of the year. This is a light, delicate, and beautifully runny honey. The bees forage on early spring blossoms like horse chestnut, whitethorn, and sycamore. It’s perfect for drizzling over fruit, yoghurt, or simply enjoying on a fresh piece of bread.

Taste:
Darker in colour, sweet, and delicately floral.

Texture:
Clear and runny.

Summer Blossom

As the season progresses, the bees turn to a rich variety of wildflowers, clover, and bramble. This creates a more complex, lighter golden honey with a wonderfully rounded flavour. This is your classic, all-purpose honey, perfect for sweetening tea, baking, or using in dressings. Some year the lime trees influence our summer honey with citrus notes.

Taste:
Rich, warm, and full-bodied with classic floral notes.

Texture:
Golden, smooth and runny.

Softset honey

Our softset (or “creamed”) honey is Olly’s personal favourite and also a customer favourite for its velvety texture. We take our spring blossom honey that had OSR (Oil Seed Rape) growing nearby, as it is naturally prone to crystallization, and guide it through a special process of mixing and resting it to create a smooth, spreadable, and luxurious honey. It’s the exact same honey, just with a different texture. Taste: Mildly sweet and floral (from its spring origin).. Texture: Thick, creamy, and wonderfully spreadable.

Heather Honey

This is the jewel in the crown of the honey world, harvested late in the summer from the wild ling heather (botanically known as Calluna Vulgaris) across the Dublin/Wicklow mountains. Heather honey is famously thixotropic—a jelly-like consistency that becomes runny for a while when stirred. It has a powerful, aromatic, and slightly smoky flavour that is truly unforgettable. It’s our honey that’s won most of the awards. Taste: Bold, aromatic, with notes of caramel, smoke, and a slightly tangy finish. Texture: A unique, thick jelly that temporarily becomes liquid when stirred.

Hot Honey

The perfect balance of sweet and heat. We take our classic Summer Blossom honey and gently infuse it with smoky chipotle chillies. It’s an addictive addition to pizza, fried chicken, cheese boards, or even cocktails. A little sweet, a little smoky, a little spicy, and a whole lot of delicious.

Bee Pollen

This is one of nature’s most complete superfoods. As the bees visit flowers, they pack pollen into “baskets” on their legs. We collect a small, sustainable amount of this multi-coloured, protein-packed pollen from the worker bees as they return to the hive. It has a slightly sweet, floral taste and is perfect for sprinkling over smoothies, porridge, or salads.
