Our
Story

Three jars of Olly’s Farm honey are displayed, each labeled differently: Wicklow Honey, Dublin Honey, and Heather Honey. The jars have black lids and are arranged on a yellow circular mat.
Our Story

It Didn't Start with a Business Plan

My story didn't start with a business plan. It started with a simple, personal desire: to find a piece of land where I could live more sustainably. I wanted to produce my own food, create my own energy, and reduce my footprint on the world. That search led me to this smallholding, and adding bees felt like a natural part of the ecosystem I was trying to build.

Honestly, I never envisaged having more than two or three hives. They were just for me—a way to help pollination and get a little honey for my own kitchen. But then, two things happened. First, I wasn’t long working with those hives and was suddenly, completely hooked. I became passionate about the incredible, complex world of bees. Second, I tasted the honey. It was like nothing I’d ever bought in a shop—it was a pure, authentic taste of the land.

A smiling man in a white shirt stands in a greenhouse, holding a large, round, pale purple squash or eggplant. Green vines and clusters of grapes hang in the background.
A man scrapes honeycomb from a frame while another man watches. They are standing next to green beehive boxes indoors.
Two men stand in an orchard, facing away and looking toward a distant hillside. One wears a "Olly's Farm" t-shirt, while the other wears a striped sweater. Apples hang from a tree branch in the foreground.
A black and orange butterfly rests on a red apple growing on a leafy tree branch, with several other apples and blurred greenery in the background.
Passion

Thats the misson of Olly's Farm

That passion (and the bees!) took over. Soon, I had far more honey than I could ever eat. I started selling a little at local markets and giving jars to friends and family. Their reaction was immediate: they all loved it and wanted more. That’s when the idea for Olly's Farm was born. I decided to build a business based on one simple principle: to produce the best single-origin honey possible, with no compromise. But I also knew that the honey was only half the story. The real magic—the thing I had fallen in love with—was the experience of connecting with the bees and the land. I knew I had to share that, too.

That’s the mission of Olly's Farm. To share the pure, uncompromised taste of this land, and to invite you in to experience the wonder of it for yourself. This is more than just a farm. It's an invitation to reconnect.

I can't wait to share it with you. Olly
