Xmas goose oven ready

It was time to prepare the geese, one for the oven and the other for the freezer. They have been hanging since last Friday.

Prepared and oven ready, will leave it rest in the oven dish over night.

This is all the fat from the 2 geese, I will freeze it in 2 bags and render it down at some point in the future. I still have some goose fat in the fridge from last year to use up.
