Pancetta is ready

Well the pancetta was ready to be used on Sunday so I took it up to the kitchen and sliced it up. It will freeze pretty good and can be taken out a slice or two at a time. Its usually sold here in little packets of lardons.

Chris is using the first 3 slices in a sauerkraut recipe...

In total about 20 slices from a pork belly, we do use a lot of pancetta in our cooking so I think that this is not going to last too long and I will have to get another couple of the go before this one is gone.

I think making cured meats during the summer months will prove difficult with flies so this maybe only a winter job.
