Latest Pancetta

The latest cure of pancetta has been hanging for close to 9 weeks, 3 weeks longer than the recipe stated. I had it in the garage for 6 weeks and then moved it up to the kitchen, we have been taking pieces off it as we need it but I think its wont last too long in here, the humidity is a little too high.

So it will be sliced up and frozen over the weekend.
