Fresh Brown & Rainbow Trout for dinner

Yesterday was the opening day of the trout fishing season and Paul had already got his fishing permit a couple of weeks ago and was all ready for fishing. He was up at the crack of dawn and let out the cow and was out the gate by 0620. He returned with some beautiful trout around 0830 and wasn't long getting them oven ready.Chris cooked them up with a great sauce that he made from scratch and served with roast potatoes. The recipe title was 'Whole roasted trout with salsa verde, roasted potatoes and lemons'.And finally to this...And it tasted amazing!Thanks to Paul for catching some great trout and thanks to Chris for cooking them up!
