This is 100% raw Wicklow honey that is simply extracted from the beehive frames and passed through a course filter/sieve to remove large particles of wax/debris. It's then put into jars ready for sale.

It's collected by my bees down in the orchard on the Powerscourt Estate in Enniskerry and is from the 2022 summer flow. It consists mainly of some summer flowering plants such as clover, bramble and lime, the lime avenue in Powerscourt is nearly a kilometre long and gives the honey a slight minty taste.

As this is raw honey it will naturally crystallize. It has not been heated, fine filtered, or processed in any way as a result it still contains pollen & wax particles.
