Feta

I cut the feta up into big cubes this evening and put it in a jar of extra virgin oil. The books say it should last in the for a couple of months. It should also mature a bit more too. If there is sediment in the bottom of the jar street a few days is a sign that the cheese was not air dried enough before or was placed in the oil.
