Deep fried courgette
Tonight we had some of the courgette flowers fried in a light batter for a starter. I had always known I could do it but never tried it as I thought it wasn't worth the effort. How wrong was I, Fabio had been in the tunnel with me before we finished for the day and told me that his mum prepared them all the time so we thought why not give it a go.
Its simple to prepare, all you need to do is:
- mix 6 tablespoons of plain flour and 6 tablespoons of carbonated water.
- dip the flowers in the mixture and let the excess drip off.
- deep fry them in some vegetable oil until they start to brown.
- take out of the oil, drain off excess oil and eat straight away.
I tried a couple of them with honey and they were great. Next time I'm going to be more adventurous and stuff the flowers with herbs and goats cheese.
