Pork Shoulder

I decided to make two massive rolled joints out of this shoulder. I can brine them into bacon at a later date or just use as a big Sunday roast over Christmas. I started off by boning it out and trimming it up. All the trimmings are going into the sausages tomorrow and the bones will go into the stock pot.

Rolling skills not to bad for a first attempt on such a large piece of meat...
