More tomato stuff
The polytunnel is still producing plenty of tomatoes, although they are slowing down. As long as it stays mild they will keep producing. So what to do with all these tomatoes, well I decided to try drying some in the oven and also making some tomato ketchup.For the oven dried tomatoes I had to cut them in half and remove the seeds and liquid part. Then they got a pinch of salt and placing in the oven cut side up for an hour...After an hour they are inverted and left in the oven for another few hours until they are only 10% of their original weight...The tomatoes are then gently stuffed into sterilised jars and topped up with rapeseed oils. The recipe says they should store indefinitely as long as they stay below the oil...The next recipe I wanted to try was for home-made ketchup, I was thinking this was great until I read the ingredient list and saw that I needed 3 liters of pasatta. I thought the pasatta making was over for this year and I didn't want to go opening the bottles I had already prepared.So I made another 8 liters of pasatta giving me 8.5 bottles of ketchup and 6 more bottles of pasatta.Anybody else have any good uses for tomatoes, I'm hoping to get around to making some tomato soup for the freezer.
