Our bees at Oldcourt Hill Farm have the best of both worlds. During the 2025 spring flow, they foraged across the farm’s wilder spaces and into the lush gardens of Ballycullen and Oldcourt. This honey is a unique blend of spring flowering plants like Whitethorn (Hawthorn), Horse Chestnut, and Sycamore, creating a classic, light spring taste.

Pure, Raw, and Local

This is 100% raw Dublin honey. To ensure you get the best of what the bees produced, I simply extract it from the frames and pass it through a coarse sieve. This removes any large wax debris while leaving the beneficial local pollen and tiny particles of beeswax exactly where they should be—in the jar.

We never heat-treat or fine-filter our honey. Because it is a pure, raw product, it will naturally crystallize over time. This is a sign of high quality and proof that the honey has not been processed or damaged by heat.

A perfect everyday honey for the breakfast table, drizzled over porridge or yogurt.
