The Gardens of Foxrock

This 2025 Spring harvest comes from my bees located right in the heart of Foxrock Village. This area provides a spectacular variety of forage for the bees. Beyond the traditional Irish Whitethorn, Sycamore, and Horse Chestnut, this honey is enriched by the vast array of fruit trees and ornamental plants in the surrounding gardens—with Apple blossom playing a starring role in this year’s batch.

Authentically Raw

Like all my honey, this Foxrock harvest is 100% raw. I simply extract the honey from the frames and pass it through a coarse sieve. This traditional method ensures that we remove only the large wax debris, leaving the beneficial pollen and natural beeswax particles intact.

Because this honey is never heated or processed, it retains its natural enzymes and full flavour. As a pure product, it will naturally crystallize over time—a sure sign of its raw, untreated quality.

An elegant honey that is beautiful on fresh sourdough or stirred into a light green tea.
