Springtime in Lucan

This 100% raw Dublin honey is collected by my bees in the fields and gardens surrounding Lucan village. The 2025 spring flow provided a wonderful variety of forage, primarily consisting of Whitethorn (Hawthorn), Sycamore, and Horse Chestnut. It is a quintessential spring honey—light in color and refreshingly floral on the palate.

From Hive to Jar

I take pride in keeping my honey as close to the hive as possible. This batch is extracted from the frames and passed through a simple coarse sieve. This removes any large wax particles but ensures the beneficial local pollens and tiny beeswax fragments remain in the jar.

We never heat-treat or fine-filter our honey. Because it is raw and natural, it will eventually crystallize over time. This is a natural process and a guarantee that you are eating pure, unprocessed Irish honey.

Perfect for drizzling over pancakes, sweetening your morning tea, or enjoying on a slice of fresh soda bread.
