The Taste of a Lucan Summer

This 100% raw Dublin honey captures the peak of the Irish summer. While our spring honey is light and delicate, the summer flow in Lucan produces a more complex honey. My bees spent the 2025 season visiting wild clover, flowering brambles, and the fragrant lime trees that line the valley, resulting in a beautifully balanced, golden honey.

Raw and Unprocessed

I believe that honey is best when it is left exactly as the bees made it. This batch is extracted from the beehive frames and passed through a coarse sieve to remove only the larger particles of wax.

We never use heat-treatment or fine filters. By keeping the honey raw, we preserve the natural pollens and enzymes that give local honey its unique character. Because it is pure and untreated, this honey will naturally crystallize over time—a hallmark of quality raw honey.

The perfect addition to a summer fruit bowl, drizzled over yogurt, or used as a natural sweetener in dressings.
