This 100% raw Wicklow honey is a true taste of spring in Enniskerry. My bees are located within the historic orchard on the Powerscourt Estate, where they have first access to the apple blossoms in early spring. This unique forage, combined with the surrounding Whitethorn, Horse Chestnut, and Sycamore, creates a honey that is wonderfully light, aromatic, and refined.

The Raw Standard

I handle this honey with minimal interference to preserve the taste of the estate. It is extracted from the beehive frames and passed through a coarse sieve to remove only the larger particles of wax.

We never heat-treat or fine-filter our honey. Because it remains raw and unprocessed, it still contains its natural pollen and tiny beeswax particles. As with all pure honey, it will naturally crystallize over time—this is your guarantee that the honey is 100% natural and has not been damaged by heat.

An elegant choice for drizzling over fresh fruit, pairing with light pastries, or as a natural sweetener for herbal tea.
