The bees at Killruddery have a very special forage source during the summer months. Alongside the wild clover and bramble found across the estate, they gather a significant amount of nectar from the historic Lime Avenue. This “Lime Honey” is prized for its delicate, refreshing taste and light floral aroma, making this batch a standout in our 2025 collection.

Raw Wicklow Quality

This 100% raw Wicklow honey is handled with the utmost care. I extract it directly from the frames and use only a coarse filter to remove large wax particles. This ensures that the natural pollens and tiny beeswax fragments—which give raw honey its depth of flavour and health benefits—stay in the jar.

We never use heat or fine filtration. As a result, this honey remains “alive” and will naturally crystallize over time. This process is entirely natural and is the best way to know your honey is pure, raw, and unprocessed.

Exquisitely paired with soft cheeses, fresh summer berries, or enjoyed straight from the spoon.
