Roast pork chops on the bone with caramelised balsamic potatoes, carrots & beetroot

Started off with digging some of the last home guard potatoes, I know these were first earlies that we planted last April and are still perfect out of the ground. Then lifted a few carrots which taste amazing and they come in all different colours and some beetroot.download_20150110_235613The veg and potatoes were chopped up and par-boiled for a few minutes to give them a head start in the oven...IMG-20150110-WA0001The pork chops were seared and cooked on the pan for 1 minute each side before going in the oven for 20 minutes with some sea sale and fresh sage leaves.
