Pickling & canning the beetroot
We picked some of the beetroot and Chris started to pickle it and get it into jars to use later in the year.It hasn't been a great year for the outdoor crops with the exception of the strawberries, raspberries, potatoes and apples. All the rest struggled to get going especially with the cold May we had. Some beetroot I sowed 8 weeks ago is still only over an inch high and don't hold any hope for getting a crop from it this winter.The beetroot is cooked first and then the skin slips off...Then sliced and put into jars...The jars are then topped up with the pickling mixture and sealed for uses later in the year...
