This isn’t just honey; it’s the result of months of labor and a deep connection to the Irish landscape. Every late summer, I move my beehives up to the “feather-beds” of the Dublin Mountains so the bees can forage on the wild purple heather.
The result is a honey so exceptional it was awarded 3 Gold Stars at the Great Taste Awards (2024) and named ‘Best in Dublin’ at the Blas na hÉireann Irish Food Awards.
The Artisan Pressing Process
Heather honey is unique because it cannot be spun out of the frames like blossom honey. To harvest this “liquid gold,” we use a traditional, labor-intensive method:

The honeycomb is cut directly from the frames and mashed.

It is wrapped in hessian cloth.

The honey is pressed out using a powerful press (similar to a fruit press).
Because we use this pressing method, the honey retains small particles of natural beeswax and a high concentration of mountain pollen, giving it a rich, jelly-like texture and a deep, woody flavor.
