A dark, rich, and unique Spring harvest from our home farm.

This isn’t your typical Spring honey. Thanks to an exceptional year for Whitethorn on our Glenasmole farm, the 2025 Spring flow is unusually dark with a deep, complex flavor. Raw, untreated, and captured right here in the Dublin Mountains.

The Magic of the Glenasmole Spring

Every year is different on the farm, and the 2025 Spring season was truly special. While our bees usually forage on Sycamore and Horse Chestnut, this year saw a spectacular bloom of Whitethorn. This has transformed the honey, giving it a much darker hue and a rich, deep taste that sets it apart from any other spring blossom honey we’ve produced.

Raw and Untreated

We believe in minimal interference. This honey is extracted directly from the beehive frames and passed through a coarse sieve only. This process removes large wax debris while keeping the tiny particles of beeswax and local pollen that make raw honey so beneficial.

Because this is 100% raw, it has not been heated or processed. It will naturally crystallize over time—a hallmark of genuine, high-quality Irish honey. If you prefer it liquid, you can gently warm the jar in a bowl of warm water (but never over 40°C to keep those enzymes alive!).

A robust honey that pairs perfectly with strong cheeses, dark breads, or a morning coffee.
