Since moving our bees to the Carrickmines Golf Course in late 2022, they have found a spectacular home among the varied trees and wildflowers of the estate. This 2025 Spring harvest is the result of that perfect environment, offering a honey that is light, aromatic, and distinctly local.

From Hive to Jar

I believe in letting the bees’ work speak for itself. This honey is extracted directly from the frames and passed through a coarse sieve only. This removes large particles of wax but ensures the beneficial local pollens remain in the jar.

Unlike mass-produced supermarket honey, this is never heated, fine-filtered, or processed. Because it is 100% raw, it will naturally crystallize over time—this is a natural process and proof that your honey is pure and alive.

Perfect for drizzling over porridge, sweetening herbal teas, or enjoying on fresh brown bread.
