While Carrickmines is known for being a bustling South Dublin hub, it is also home to quiet, green pockets where nature thrives. Our apiary here is perfectly positioned to let the bees enjoy the best of both worlds—foraging across lush suburban gardens and nearby countryside fields. This diverse diet gives the honey a wonderfully complex, multi-floral character.

From Hive to Jar

At Olly’s Farm, we believe in letting the bees’ hard work speak for itself. This honey is simply extracted from the frames and passed through a coarse sieve. This removes larger pieces of wax while keeping the beneficial local pollens perfectly intact inside the jar.

We never heat, pasteurise, or fine-filter our honey. Because it is entirely raw, it will naturally crystallise over time—a natural sign of its purity. If you prefer it liquid, simply place the jar in a bowl of warm water and let it gently soften.

Perfect for drizzling over porridge, sweetening herbal teas, or enjoying on fresh brown bread.
